Hello and welcome to this episode of Kennedy Saves the World. So last week, as you know, as I was droning on and on about it yesterday with Jimmy Fala, everyone in New York has a flu. I had the flu last week and it's tough getting the flu at this time of year because all the great plans you have just completely go out the window. And you know, some years I am gluten free and I love baking. So I have to find new and creative ways to make delicious holiday treats that look good and taste good and don't taste like cardboard, but they're made with rice flour. And it is possible, and it is possible because of butter. But when you're baking, it also requires time. So the only thing that I have had time to make this year, it's been my go to chocolate chip cookie recipe. And, and I have to tell you, so just take the Toll House. If you want to make delicious, insane gluten free chocolate chip cookies, go on the back of the Toll House bag. It's, it's the easiest recipe in the world. You don't have to make anything up. But the thing that makes chocolate chip cookies incredible brown butter. So brown butter is very easy. What I do is I use half of the Toll House recipe. I take a stick of butter and you melt it on low until it gets nutty and brown. Try and use a lighter color pan. See it change color and it just, you know, and if you're confused, go on a YouTube video. Look it up. Brown butter, it's very easy to make. Just low heat, let it melt, let it brown, set it aside, let it cool. And then I do a cup of rice flour, a teaspoon of salt, a teaspoon of baking powder, and you mix that together. And then I do a half a cup of brown sugar, a quarter cup of white sugar. You cream that with the brown butter and then you add one egg, a teaspoon of vanilla, and that's pretty much it. And then you mix in the dry, fold in chocolate chips and have at it with the chocolate chips. When I made them this weekend, I did extra dark chocolate chips and white chocolate chips. Because when it's Christmas time, put everything together, doesn't matter. Put butterscotch, milk, chocolate, throw them all in, no one cares. It's like everyone is doing dry January, so they're fattening up now, ready for January hibernation. So that was the only thing I was able to do. I was gonna do Mexican wedding cakes and gingerbread men and these little Romanian cookies that my grandmother used to make. And I don't have the word for it, I just have the love in my heart. But the point is, even if you can only do one thing on your list of 15, give yourself credit for it. Because not everybody is perfect around the holidays. And that is just the reality of it. It's not even a sad reality. And this is the time of year where instead of putting a phenomenal amount of pressure on yourself to be the kind of perfect homemaker like Meghan Markle, why not just have a fun home that's got a few things in it and you've got one, one thing that makes people happy instead of 15 things that could fill a bakery. Take a little bit of the pressure off and you will make yourself feel so much better. Because that is what the holidays is really about. It's about spending time together and communing, whether it's in church or over a plate of warm cookies or hot food that you can enjoy together. It does not have to be utter perfection. That's for later.
