So everything's pre recorded now, but watching it post, like, year, how is that? It's an insane, like, feeling just because. And I think it's an insane feeling just because it's with Gordon Ramsay.

I think Gordon Ramsay is, like, the most famous chef in the world by far. I think everyone knows him. He's such a household name. So to be able to be in his presence, to be able to say that he knows who I am, is, like, one of the greatest accomplishments of my life.

There are some moments that are, like, kind of cringy, but, you know, what do you mean?

Yeah, like. No, no, no. Like on the show. You know when you have interviews and there's drama and you don't even remember what you say? You're blacked out half the time, you're running on adrenaline, you're working 12 hours a day. On set, like, it's insane.

But are the producers, like, feeding you lines in any way or is this all, like, you're just going off of pure emotion?

[Matt]

There's definitely things that they can say to try to make you, like, react for sure. But I definitely try to keep my. And like.

So you shot the show in January? Didn't get to see the show at all until it came out.

[Matt]

Until it came out. We didn't get any previews, nothing. And we shot it in Ireland, so we were in a completely different country.

[Josh Leva]

Was that your first time?

[Matt]

First time? Yeah. 11 hour flight from LA. It was crazy.

[Josh Leva]

Wow. Did you have a Guinness?

I did, I did. As soon as I got to the hotel, I'm like, give me a Guinness.

Okay. I've never had it. I've made this, like, pack to myself that I'm gonna try it for the first time.

I love Ireland. It's so beautiful. Everyone's accents are amazing. They love to drink. They just have, like a potty mouth like these.

Yeah. They'll just be crazy. Yeah, yeah. It was. It was a great time. Everyone there was super helpful. All of the producers, makeup artists, hairstylists, they were all from Ireland.

I was trying to think of, like, the Ireland accent. How does it go? It's like. Like, bloody hell. I feel like they throw around a lot.

[Natalia Gutierrez]

That's Australian.

[Josh Leva]

I think you gotta split the G. You can't.

I'll take it. I'll Take it. So obviously like you're shooting and stuff like that. Did you have a lot of free time? I mean, I know you just said 12 hours, like a day. So not a lot of free time.

[Matt]

No. So we, we all get flown out from wherever we're from. We're like guided to this hotel room and you're not allowed to talk to each other at all. So we're all.

[Natalia Gutierrez]

Oh, my God. Well, it makes sense.

[Matt]

We're all in a group together.

[Josh Leva]

Competition. It's true. Competition.

[Matt]

Yeah. But it's like to avoid alliances.

[Natalia Gutierrez]

Yeah. Camaraderie.

Come close to anyone. But it's very like, it almost felt like covet again where it's like, keep a 6ft distance, don't talk to anyone.

And you went by yourself.

I went by myself.

If you wanted to like leave the room, you had to like phone the producer to go walk you, to walk.

[Matt]

You to the, to the bar, to walk you to the gym and like all that stuff. So they. But it's also like a liability thing. Like if someone's too shit faced or if someone falls or something. It's all in the producers and then it like, it'll ruin the show.

I had auditioned for like Love island in like 2019 and they put. I didn't. They put me in a hotel and they had to do that. So I got that experience.

[Matt]

Which is pretty crazy. How did you audition for the show?

[Matt]

I didn't. I didn't. So someone reached out to me and I thought it was a scam and I was like, there's no way this is real.

[Natalia Gutierrez]

And that's when, you know, it's like.

[Josh Leva]

Yeah. Oh.

[Matt]

But I think at the time, I think at the time when this, this opportunity was presented to me, I think I had like 60, 000 followers. And I was like, barely get into the rhythm of Instagram and like my cooking and stuff. And I was working for a surgeon at the time and I was doing his social media and I think the whole process, it took like three months to find out if I got accepted. And then I finally got accepted because they do like a thorough background check, make sure you're not a serial killer, all that kind of stuff. And then did you have to take.

Out like a psychology test as well?

[Matt]

You do speak to a psychologist. Yeah, a doctor.

[Josh Leva]

Yeah, bro. It's pretty. I had to take a super intensive test. They ask you like crazy questions.

[Natalia Gutierrez]

Weird that all back in the states.

[Matt]

I did that here. Yeah. I was all like, through zoom.

[Josh Leva]

And they ask you the same question, like, in different.

[Matt]

Yeah, yeah.

Did you. You have an amazing personality and very confident. Were you as confident going into the show as you are, like, right now?

Like, if I crumble while I'm there, I'm screwed just because of how much anxiety I have or how much I'm overthinking.

Even, like, back at the hotel and then at the show, too, you're just constantly thinking, yeah.

And they hit you with curveballs. Like, it's not like, oh, wow. Like, I think people love consistency and everything being the same, and you're like, okay, I know what's gonna happen. But then things change, and you're like. You just. You just have to pivot. You have to pivot and be like, all right, this is what we're doing. All right. It, like, wow. Yeah, that's.

Yeah. I mean, it's entertainment, right? They got to make it entertaining for the audience. I mean, they're not trying to make it convenient for you.

And I want one the lamb sauce. But I had the privilege of him actually being a mentor and being positive and actually helping you. That's exactly how I think about it. For me, it's purely performance. Right. Like, what's going to get me the best outcome? I have macros that I have to hit, like, 250 grams of protein. Blah, blah. That's the way I eat.

The way I think about food is, like, if I want to eat something in the morning, I just really, like, close my eyes and I go back into time. Right. And I'm like, damn, where was I that one day when I had those webitos? And then I go back into Time and, like, say, I was at my grandma's house, you know, I just really.

But then I cook, and then when I eat, I'm there.

And I think about it all, like, as soon as we have breakfast, I'm like, okay, what are we doing for lunch? Like, what's that?

But not because you're hungry. It's just like. That's like an art form or like an expression, but it's also, like a privilege.

Right? It's a privilege to be able to have so many different kinds of food throughout your day. Like, not just the same thing, especially being someone that cooks. So I think it's such a privilege, but it's honestly to indulge. Every time I'm with a guy or with guy friends or whatever, I like. They, like. You guys have this thing where you guys just shove so much food in your mouth and you guys look like chipmunks just eating your food. And I'm like, the food's not going to go anywhere. Like. Like, chill out.

I eat so fast.

And I drink really fast, too.

And we're like, like, you know, we're cute, but we're like. We're like rottweilers. And that's how we eat. You know, it's just different species. And my wife. My wife gets at me all the time like, hey, breathe. Slow down, slow down. Like, enjoy your food. And I'm like, oh, my God, you're right. Yeah, I catch myself, bro.

I'm like eating my plate of food before I even sit down to the table. I'm like, oh, my God. Yeah. So have you been like, did you, like, grow up and you just, like, knew you had.

Yeah. Where did all this come from? Yeah, somebody.

So I. I learned how to cook forcefully. I have three brothers and I'm the only girl out of all of them. So my mom had us back to. Back to back to back. And she was a typical Mexican mom. She's like, yon, like, you need to help me. You're the girl. Like these. These boys are like, crazy. And then my dad was a truck driver, or he still is.

[Natalia Gutierrez]

And he's gone a lot, right?

[Matt]

Yeah, he'd be gone and he'd wake up at 4 or 5 in the morning, and instead of my mom waking up to make him his cafe and like, his.

[Josh Leva]

He'd wake you up?

[Matt]

She'd wake me up.

[Natalia Gutierrez]

Oh, she'd wake you up?

[Matt]

Yeah. And she'd be like. Like, it was a responsibility of mine. And I was nine at the time. I was like a baby. So then I just like, learned and cooked there. And she would force me. She would be like, oh, my mom has never served me a plate of food in her life. She's like, like, you're. You're independent.

[Josh Leva]

But she would serve your brothers.

[Matt]

But she would serve my brothers. Yeah, and I think that's like, that's pretty common. That's a typical, like, you know, kind of like man chista way of like growing up and stuff like that. So we were also super poor. And I would watch the food channel on the regular. Like, it was not cable.

[Josh Leva]

It was like, yeah, just like regular television.

[Matt]

Regular television, yeah. Yeah. And so I would dream of like, this food because we would eat a lot of frijoles, a lot of quesadillas, a lot of sandwiches. I would dream of, like, the food that I would see on tv. And that's when I saw Gordon and, like, simply Ming and Emeril live and all of those, like, older. I love Emerald Life or even, like, Julia Child, like, those older cucks that were on television. And I think that's where, like, my appreciation for food came. And then I was like, one day I'll be able to try. Like, I didn't know what truffles were. I was like, what does that taste like?

[Natalia Gutierrez]

Is that a dance?

[Matt]

I was like, one day I'll be able to try this food. And so I, I, that's how everything started.

[Josh Leva]

That's crazy. Wow.

[Natalia Gutierrez]

Wow. And you really, like, started to really love it. But what about recipes?

[Matt]

No, but it didn't happen that way. Like, I. I cooked. I've cooked throughout my whole life. But I had regular jobs, you know, I had. Right. So this, this is still new. I've only been doing this for two years. I was gonna ask professionally, I guess professionally, yeah. And being on a show and doing caterings and private dinners and doing it for social media. I went through, like, the most traumatic experience with a guy or, like, my old boss that was in the entertainment industry. And I was a young single mother working, trying to make a living. And it was, like, the most toxic work environment, like, that you can think of. And it's like, you get. You get the experience of, like, men being in power and abusing their power. And so it was a terrible experience. And I forcefully had to quit. I was like, I never want to do this ever again. And I started thinking, like, what am I going to do? Like, none of these jobs are working out for me. Working for these private, like, companies, like, they just don't make me happy, even though that's how you pay the bills. And I quit. And I, like, hated men for a long time. And I was like, I don't want to be seen. I don't. I don't want anyone to think I'm pretty. Like, I just completely lost it. I was like, I think at the worst time of my life, unemployed, like, didn't know what my purpose in life was at that point. And I spoke to my life coach, and she asked me, she was like, if you can do something for the rest of your life, and it had nothing to do with money, what would you do? And I said. I took a pause, and I was like, cooking is the only thing that makes me happy. And she said that I had the biggest smile on my face. And she's like, that's what you need to be doing. And so then I started making content, like, just with my phone, my iPhone. And I was like, fuck it. I see lovoy. I said, however it comes, like. And I had the worst editing because I always made excuses. This is something I've always wanted to do and I made excuses. I'm like, I don't have the lighting, I don't have the cameras. I don't have the editing skills. I don't have anything. And then a month into making content, I got a viral video with my dad making horchata. Okay. And then I got 10,000 followers from that one video. And that kind of jump started everything. So, you know, I always say now how lucky am I that things didn't go my way as a redirection of my purpose in life? So obviously I don't wish that upon anyone, but that was. It came out of trauma, unfortunately. And here we are now.

[Josh Leva]

That's kind of crazy. That's crazy how like life works in that manner.

[Natalia Gutierrez]

Damn. Wow. While you were like saying all that, I was like this. Wow, that's incredible.

So I feel like I always see you on my feed, like, like the cooking videos and stuff like that. What's your day to day right now? Like, do you have like your videos planned out? Do you like. Because cooking is different too, because like, you, you don't have like all the ingredients at your house.

Like, no. Like, do you plan out these videos?

[Matt]

Yeah. Yeah. So.

And you've gotten a lot better, right, with like editing clearly, or.

[Matt]

I just know what people want to see my content. Like everyone, you know, people have great editing skills and there's like ASMR cooking videos and people do like really top notch, like, videos. But I do it the way that it works for me. I'll just be like inspired. I'll be like, I'm really craving this. Or I'm really craving that. How can I make this? Or if I see a movie, like this song goes perfect with like what I'm trying to create. So I get a lot of inspo from music from movies or from even like trending like bits like sounds where I'm like, oh, this would be so funny. And then I plan out my week. I write it on my whiteboard all of the dishes that I want to make, and then I go to the store, and then I do everything. Okay. So I do the shopping, I do the putting away.

[Natalia Gutierrez]

That's what I'm saying. With cooking, it's different. It's like a whole thing.

[Matt]

The cooking. I do the filming all by myself, and then I clean everything up, and then I edit it, and then I post it, and then I post it on all the channels. And so it's like a one cook.

Some more, and then you do it.

[Matt]

Again, and then I do it again the next day. That's crazy. It's. It's honestly very time consuming. But I'm fortunate. I don't think I can ever complain about something like that.

Do you have a specific cuisine that you like, specialize in or that you enjoy cooking?

Mexican.

Yeah. Like, so that's the struggle that I have because I have had editors and I have had videographers following me around. But sometimes, as dumb as it sounds, the professional kind of videography content people don't like anymore. People like you recording, they want that wrong.

Yeah. Like it like you're at your house, like you're. The phone's shaking 100. They want to be able to connect with you. Like, oh, she's just in her kitchen. Like this isn't a whole production. Because when I first started, I was paying someone 800 to come to my house.

Shoot and edit and shoot and edit. And we would do three recipes back to back and I was like gastada.

My goal has never been to open up restaurant. It's also one of the biggest like, like profit losses kind of business. Like having a restaurant. I do want to open up a coffee shop cuz I love coffee.

So Latina owned Mexican. I want to make all the pan tulces like there and have really cool crazy Mexican flavors and syrups. I always judge coffee shops by if they make their syrups in house. If you're not making your syrups in house, then do not open up a coffee shop. Because I can get moan in at Smart and final. Okay. All that syrup, all that. What's the point of having. I never thought about this amazing coffee with these beans that were like curated for this long. If you're just gonna throw artificial syrup on it.

What are your thoughts on like sugar free?

I, I personally don't like sugar free. I don't like the taste of it. I don't like stevia. But I understand people that are diabetic and all that stuff that trying to watch your calories. Yeah, it has to be there.

So many women that don't know how to cook and, like, they cook, like, to survive, like, basic necessities, but to really get in the kitchen and, like, I think it's like a proud moment, just like, running. As for you or whatever that might be for you when you put the time. That's my goal. If I can get someone to be like, hey, I made, you know, your recipe with my husband and my kids. And. And we had such a great time. Because that's my, like, fondest memory growing up is just having, like, food with the family, all the, like, quinceaneras and people just, like, gushing over food or the. The recalantado. Like, those are my fondest memories. And so I want to keep that alive, keep the tradition alive. Yeah.
