But one more thing before we do, I chose a birthday cake for our first recipe because they're sort of meaningful to me in a not very normal way. So whenever I'm talking to a friend who's going through a challenge, like is about to have a job interview or give a speech, I often say, remember, you are bringing birthday cake. And what I mean is, you are the cake. You're the gift, you're the prize. Don't wait around for someone to tell you that you are or give you permission to shine. Just by being here, alive on earth, you are bringing the life force from inside of you to the party. And that's what I mean by the birthday cake. Everyone has it, and it's a fabulous thing. And everyone loves a birthday cake. It has vaulted cell ceilings with exposed white oak beams that soar overhead, creating an airy, expansive feel. French doors open onto a lush garden patio, and beyond that is the Pacific Ocean, glittering in the sun.

And it smells heavenly. You put on your favorite apron and wash your hands at the large farmhouse sink next to the window. Above the sink is a terra cotta pot with fresh parsley, rosemary and sage growing in it, giving off their comforting mix of perfume. As you dry your hands with an old tea towel, you look through the window. It frames the Santa Ynez mountains rolling in the near distance. It's still spring, so they're tinged with bright green, but by summer they will turn a shimmering gold. In the center of the kitchen is a large island made from Italian marble. Its dramatic black and gray veining resembles an abstract painting. Over the island hangs a hand blown glass chandelier and on one side, a rack for hanging copper bottom pots. On the island is everything you need to bake a birthday cake. All the ingredients. Ingredients, the equipment, the decorations.

Surprise birthday party for one of your loved ones tonight. And the idea of creating this gift feels so good, it will be infused with love. Love you're feeling already. And as you go deeper and deeper, you know that the recipe will pull you along step by step. There's nothing to do but follow the directions by following my voice. Nothing to focus on but the details of this beautiful creation, allowing love and creativity to pull you deeper and deeper. As the sun begins to sink over the ocean, the light shifts, catching the golden accents of the marble, the polished copper pots, making the kitchen glow as if it were lit from within. A kitchen is more than a place to cook. It is a sanctuary. The hearth is the heart of the home. The fire the place of warmth and transformation. Magic happens here and tonight you are making a masterpiece. A chocolate layer cake with some three tiers. And each tier will contain three layers. Between each layer will be a silky chocolate ganache. And the whole cake will be frosted with buttercream icing and adorned with golden chocolate decorations. Just envisioning it feels good. You move to the oven.

Six burners and a mat to stainless steel finish. You turn the large center knob to preheat the oven. You hear the click, click, click. And then the gentle of the gas igniting within. Just as every cook has done going back through human history all the way to the caves. You've lit the fire, now you prepare the pans.

There are nine pans for this cake.

Three large, three medium and three small. You take a piece of waxed paper and dab it in a bar of softened butter and then lightly Grease the cake pans. First the large, then the medium, and then the small. Now you add a small handful of flour to each pan and shake it over the sink to distribute the flour evenly along the bottom of the pan. And then, tilting the pan, you tap the flour along its surface, along its sides, coating the pan so the cake will slip out easily. You do this with every pan, and after each one is prepared, you return it to the far end of the marble island, where it sits ready for the batter. Now you make the batter. To your left are your dry ingredients pre measured. In large stainless steel bowls are flour, sugar and cocoa powder. And in small ceramic ramekins are baking soda, baking powder and fine sea salt. You pick up some cocoa powder and let it run through your fingers. It is as fine and dark as the richest soil. You pull a large whisk from a drawer and into the flour bowl. You add the sugar, cocoa powder, salt, baking soda and baking powder. And gently, gently whisk them together. Tiny bits of flour float upward like talcum powder, and the cocoa releases its signature chocolatey scent. When it's all mixed, you set it aside. To your right are your wet ingredients. There are six large eggs. You pick one up. It's cool to the touch and smooth as porcelain. In other bowls are buttermilk, freshly brewed decaf, espresso, melted butter, and in a small ramekin, pure, vanilla extract. You lean forward and take a sniff of the espresso. Its aroma is rich, almost smoky. In a separate bowl, you break the eggs carefully, tossing the shells in a small compost container next to the sink. You add the buttermilk, espresso, melted butter, butter and vanilla, and whisk it all together.

Up as they break and surrender to the mixture. It's nice to watch all the liquids come together, the yolks spreading, the butter glistening and the smell of the espresso rising. Sweet, rich and satisfying. You move to the other side of the island where the flowered pans are set out. First, you pour batter into the three 10 inch pans just halfway up their sides. Then, using a spatula to guide the batter, you pour into the 8 inch pan. The first, second and third.

Rest of the batter at the bottom. Now you pour it into the smallest 6 inch pans.

You have just enough to fill all three and to lick the spatula yourself. You place the bowl and spatula in the sink. You bring the pans filled with batter to the island near the oven. You put on your oven mitts. They were given to you by a family member. They have a floral print, but it's been burned in places. They've seen better days, but they still work. And wearing them feels nice. You open the door of the oven and the wave of trapped heat warms your face. You reach back to the island and pick up the biggest pans, sliding them onto the middle rack. While the medium and small pans go above and below. You close the oven and remove the mitts, placing them on the counter. You set a timer on your phone and you take a nice deep breath. You have focused for a while now, so you feel like relaxing even deeper.

Turn on the stove to medium heat and heat the cream until it's just steaming. As you pour it over the mound of dark chocolate, you pause, watching the edges of chocolate melt and ripple into pools of silky liquid. Ganache means fool or chump in French, and rumor has it that ganache was accidentally invented when a pastry Apprentice in the 1800s poured hot cream over chocolate instead of water. What a happy accident.

Your ingredients are softened butter, powdered sugar, cocoa powder, heavy cream, vanilla extract and salt. You take a hand mixer from a cupboard and plug it in in a large stainless steel bowl. You beat the butter with the hand mixer until it's pale and fluffy. You gradually add the powdered sugar, the cocoa powder and the tiny pinch of salt.

With a sharp knife, you level each cake, trimming its top ever so slightly to ensure an even stack. First, you place a 10 inch layer on a cake board. With an icing spatula, you spread on a generous layer of ganache and then a layer of buttercream.

Sweet concoctions as you watch the spatula create a smooth surface. You place another 10 inch cake on top of the first and spread another layer of ganache and then buttercream. It sits neat, neatly on the larger layers, leaving a 1 inch ledge all around. Spread with ganache and buttercream and then Repeat with the second and third 8 inch layers. Now you turn to the smallest cakes, each only 6 inches in diameter. They will make the top tier of the cake. Place the first one carefully on the second stack, creating a second 1 inch ledge all round. Spread with ganache and buttercream, then repeat with the second and third layers. You look at is tall, balanced, imposing. You feel full, proud of what you've accomplished so far. You apply a thin layer of buttercream to seal in any crumbs or patch any holes. You open the refrigerator and remove a shelf in order to fit this large cake inside. You pick up the cake and it is heavy and place it carefully in the fridge to cool. And now you relax, going deeper and deeper.
